That was Carlo Chalisea's approach when he started Don Lucho’s in 2013. In fact, he started with just a small food cart selling unique Peruvian cuisine, an untapped niche in the Pacific Northwest.
As their reputation grew so did their business, and that success led him to opening a restaurant last year.
In this interview, we’ll talk with Carlo about how to start a food truck, as well as how to know when it’s time to make the leap into a restaurant business. His distinctive menu is a bit part of his success.
We’ll talk about the most popular dishes and how he’s built a customer base and reputation around them.
Don Lucho’s got a big boost early in its existence when it was mentioned by world-renowned Peruvian chef Gaston Acurio on his Facebook page.
